You can turn this off however by commenting out the only line of code in the file /etc/postfix/custom_header_checks. Although I have not setup a Lion server yet but this may or may not work, please report your findings so we can help the community.

hi i just read your article – i installed lion server and users are complaining about getting emails bounced from senders without subject fields. i saw your solution which i would love to implement, however, which file should i be modifying?

Hard to say but they have reasons for doing things that we do not always understand. I believe that this could be a way for them to impose some protection against spoofing attacks but I am taking a huge stab in the dark on that one.
